No special settings just bringing it to the back - shortcut to bring to back is ctrl + shift + [
Clipping mask puts an object or shape within another shape, to select multiple shapes hold down shift and left click the 2 objects.
What version are you using? There should be a little box above the colour slider if not press g and click and drag in the direction/angle you want your gradient to face.
